Ingredients below are for a 5.5-cup cooker.
2 garlic cloves, minced
½ cup low sodium chicken stock
½ teaspoon dried oregano
1 tablespoon olive oil
⅛ teaspoon kosher salt
3 tablespoons lemon juice
2 large boneless, skinless, chicken breasts
2 tablespoons fresh parsley or basil, chopped
- Add the garlic, chicken stock, dried oregano, olive oil, salt, and half of the lemon juice, to the rice cooker inner pot, and stir to combine the ingredients.
- Add the chicken breasts, laying them flat side by side.
- Close the lid and select the [Slow Cook] function. Set the timer to 40 minutes and press start.
- When the cooking is done, open the lid and stir in the remaining lemon juice.
- Transfer the chicken to a serving plate and drizzle the sauce over it. Top with fresh herbs and serve.
