Ingredients below are for a 5.5-cup cooker.

  • 2 garlic cloves, minced

  • ½ cup low sodium chicken stock

  • ½ teaspoon dried oregano

  • 1 tablespoon olive oil

  • ⅛ teaspoon kosher salt

  • 3 tablespoons lemon juice

  • 2 large boneless, skinless, chicken breasts

  • 2 tablespoons fresh parsley or basil, chopped


  1. Add the garlic, chicken stock, dried oregano, olive oil, salt, and half of the lemon juice, to the rice cooker inner pot, and stir to combine the ingredients.
  2. Add the chicken breasts, laying them flat side by side.
  3. Close the lid and select the [Slow Cook] function. Set the timer to 40 minutes and press start.
  4. When the cooking is done, open the lid and stir in the remaining lemon juice.
  5. Transfer the chicken to a serving plate and drizzle the sauce over it. Top with fresh herbs and serve.

We’re using skinless, boneless chicken breast to make this lemon chicken recipe. It’s a lean cut, but doesn’t skimp in the flavor department.

Minced garlic imparts a pungent note that compliments the small amount of chicken broth that will be the basis of our simple sauce to drizzle on top at the end.

Dried oregano, kosher salt and extra virgin olive oil round out that fresh and rustic flavor profile. And some freshly chopped flat leaf parsley not only makes the completed dish look nice with a pop of color – it introduces a hint of verdant garden freshness to the overall dish. Fresh basil would work nicely too.

To start, add all of your sauce ingredients to the inner pot of your Tiger multifunctional rice cooker (BUT RESERVE half of the lemon juice for later). 

Mix well, then lay your chicken breasts flat, side by side.

Close the lid, select the Slow Cook setting for 40 minutes and press the Start button.

When the cooking cycle ends, open the lid and stir in the remaining lemon juice.

Finally, plate it up, drizzle the cooking sauce over top of your chicken breasts – and top with freshly chopped flat leaf parsley or basil.
