Ingredients

Ingredients below are for a 5.5-cup cooker. Double the ingredients for a 10-cup cooker.

  • 12oz Fresh chickpeas, soaked overnight
  • 11oz Canned diced tomatoes
  • ⅓ cup Diced celery
  • ⅓ cup Diced carrot
  • ⅓ cup Chopped onion
  • 2 Garlic cloves, minced
  • 1 Jalapeno pepper, finely chopped
  • 1 Bay leaf
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • 2 Cups low sodium chicken broth
  • Cilantro leaves, for garnish
  • Lemon wedges, for garnish

Directions

  • Place all the ingredients in the inner pot and stir.
  • Choose the [Slow Cook] setting and set the timer to 80 minutes. Press start.
  • Serve with lemon wedges and fresh cilantro.
