Ingredients below are for a 5.5-cup cooker. Double the ingredients for a 10-cup cooker.
- 2-3 Purple Hawaiian or Okinawan sweet potatoes, peeled
- 200 ml Water
- ¼ tsp salt
- Place all the ingredients in the inner pot and close the lid. Choose the [Slow Cook] function and set the timer to 35 minutes. Press Start.
- Once complete, serve on a plate.
WHAT ARE OKINAWAN PURPLE SWEET POTATOES?
Okinawan purple sweet potatoes are long and tubular shaped with a tan skin and a vibrant purple interior. Also known as Japanese purple potatoes and Hawaiian purple potatoes, they are packed with manganese, vitamins A and C – along with a good deal of dietary fiber and iron.
Once cooked, they take on a smooth, creamy and slightly starchy consistency with a mildly sweet and nutty flavor.

HOW TO MAKE PURPLE SWEET POTATOES IN A RICE COOKER
The premise in cooking purple potatoes in a rice cooker is very similar to cooking them on the stovetop. You’re basically boiling them (peeled) until they achieve a soft, smooth, creamy texture.
However, the advantage to the rice cooker method is that you don’t have to keep an eye on a boiling pot of water on the stovetop – constantly sticking a fork in your perfect potatoes to see if they’re properly cooked.
When the timer sounds off, they’re good to go!
For a perfectly cooked Japanese purple potato, simply peel them and place in your rice cooker with water and a pinch of salt. 35 minutes on the Slow Cook function should do the trick.
