Slow Cooker Korean Beef

Ingredients

  • 1 pound beef tenderloin or sirloin sliced thin into 1/8-inch thick pieces
  • 1 large carrot, sliced into bite size sticks (julienne)
  • 4 scallions, finely chopped

For the marinade

  • 1 small onion, finely chopped
  • 1 Bosc pear, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 chopped green onion
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • Pinch of salt and pepper
  • 1 tablespoon toasted sesame oil

Directions

  • Put the ingredients for the marinade in a blender and blend until smooth.
  • Put beef and marinade in a ziploc bag or bowl, seal and refrigerate overnight or for at least 2 hours.
  • Add beef, half of the marinade and carrots in rice cooker, close the lid and set to slow cooker mode for 3 hours.
  • Serve in lettuce wraps topped with scallions and chili sauce.

A SUPER EASY SLOW COOKER KOREAN BEEF RECIPE

Making a simple pear based marinade for your beef accomplishes two things:

  1. It introduces a ton of flavor to the beef in a relatively short time.
  2. Pear contains an enzyme called calpain which acts as a natural meat tenderizer.

So, not only will your marinade introduce a mild sweetness to the meat that counters the savory and nutty elements from additional ingredients like soy sauce and sesame oil – it will also make your cooked beef SUPER tender.

After marinating, just place your Korean beef in your Tiger rice cooker and use the slow cook function for three hours.

HOW TO MAKE LETTUCE WRAPS

If you’re planning to make Korean lettuce wraps with your slow cooked beef, look for butterhead or bibb lettuce at the grocery store. As long as they’re fresh, the broad, sturdy leaves will hold a good amount of filling without falling apart. Romaine lettuce will also work in a pinch.
