Ingredients below are for a 5.5-cup cooker. Double the ingredients for a 10-cup cooker.
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ cup onion, chopped
- 1 Carrot, chopped
- ½ cup red bell pepper, seeded and chopped
- ½ cup green bell pepper, seeded and chopped
- 1 teaspoon chili powder
- 1 teaspoon cumin powder
- Rinse quinoa under cold water and drain.
- Place all the ingredients in the inner pot, stir and set in rice cooker.
- Select the [QUICK] setting and press start.
- Stir well and serve.

HOW TO COOK QUINOA IN A RICE COOKER
The biggest thing to keep in mind, whether you’re making quinoa on the stovetop or in a rice cooker, is the quinoa to water ratio. Once you’ve got that simple math figured out, the sky’s the limit!
- In most cases you’ll want to use 2 cups of water (or broth) for each cup of uncooked quinoa.
And that’s typically the case whether you’re adding chopped veggies or just cooking quinoa on its own.
